I order gnocchi at restaurants but never considered trying to make it myself. Why? Because it “sounded” difficult and all the recipes I had ever looked at called for using a ricer or food mill, which I don’t have.
But, today on KKTV 11 News, the Cliff House at Pikes Peak Executive Chef, Justin Boudouin takes all those fears away and shows just how easy it is to make these delicious potato dumplings (or pillows.) Once you get the knack of making these, you can experiment with additional ingredients to create wonderful and delicious variations. If you’re like me and don’t own a ricer or food mill, you can simply press the potatoes through a colander. Who knew?
The basic ingredients for this dish are potatoes, eggs, flour and salt…making it really affordable. These can also be made ahead of time and stored in the freezer for up to 6 months.
