These pumpkin cheesecake bars are super easy to make due to using a boxed pound cake mix. They take about 10 minutes to prep, 30 minutes to bake and taste so good. These are tasty for dessert, treats for a party or as a homemade food gift for the holidays. I bought my canned pumpkin at the Dollar Tree for $1.00 (which saved some money) and my pumpkin pie spice from Penzeys (I think they have the best spices and they usually cost less than the grocery stores). This recipe makes 48 bars…enough for you to enjoy and have some to share!
EASY PUMPKIN CHEESECAKE BARS-
Ingredients:
- 1 (16-oz) package pound cake mix
- 3 eggs
- 2 tablespoons butter, melted
- 4 teaspoons pumpkin pie spice
- 1 (8-oz) package cream cheese, softened
- 1 (14-oz) can sweetened condensed milk (NOT evaporated milk)
- 1 (16-oz) can pumpkin (about 2 cups)
- 1/2 teaspoon salt
- 1 cup chopped nuts (your choice)
Directions:
Preheat oven to 350 degrees. In large mixer bowl (I used beaters), on low speed, combine cake mix, 1 egg, butter and 2 teaspoons pumpkin pie spice until crumbly.
Press onto bottom of 15×10-inch jelly roll pan (or casserole dish).
In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk then remaining 2 eggs, pumpkin, remaining 2 teaspoons pumpkin pie spice and salt; mix well, until smooth.
Pour over crust; sprinkle with nuts.
Bake 30 to 35 minutes or until set. Cool. Chill; cut into bars. Store covered in refrigerator.
