This cookie recipe is one my mom used when baking holiday goodies. I ran across the hand-written recipe the other day, with all the spots of oil and other ingredients that had splattered on it over the years, and decided to make them for a few of our neighbors and friends. The ingredients are fairly common so chances are, you already have most of them on hand. This makes a lot of batter so make sure you use a really big bowl.
JUST THE BEST COOKIES –
Ingredients:
1 cup butter
1 cup brown sugar
1 cup sugar
1 egg
1 cup vegetable oil
1 cup rolled oats
1 cup Rice Krispies or Corn Flakes (feel free to use the store brand to keep costs down)
1/2 cup coconut
1 cup chopped pecans
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
confection sugar for dusting (you can use a bit of cinnamon too if you like)
Directions:
Preheat oven to 325 degrees.
Cream butter and sugars until light and fluffy. Add egg and blend. Add vegetable oil, stirring until blended in.
Add oats, cereal, coconut and nuts; stir well until mixed.
Add flour, soda, salt, and vanilla; mix well.
Form into balls about 1 inch. Place on ungreased cookie sheet. Flatten cookies with fork dipped in water.
Bake 12 minutes. Allow to cool 2 minutes before moving to cooling rack. Sprinkle with confection sugar and/or cinnamon.
Makes about 8 dozen cookies.
