I bought my chicken on sale at Albertsons a couple of weeks ago when it was on sale for 88 cents a pound. For this recipe you can use chicken breast, a whole chicken, thighs or legs…depending on if you like dark or white meat. I used split chicken breast, didn’t bone it first or take the skin off….when cooking it in a crock pot, I let the pot do all the work because the meat just falls off the bone. But if you want, use boneless, skinless (you usually pay more for that though.) I used canned refried black beans that were on sale for 50 cents a can and just doctored it up a bit with ground cumin and some chopped up jalapeno pepper. Tacos are another one of those menu items that you can use up any leftovers with to garnish….This is super cheap and easy! And the frozen bananas….delicious! (And hardly any calories!) I spent about $7.50 for the chicken tacos, refried beans and banana dessert. There’s probably going to be leftover chicken so you could add on another 20 to 40 cents and make 6 to 8 tacos…but just one is filling in itself.
CHICKEN TACOS
Prep Time: 5 minutes
Cook Time: 4-8 hours in crock pot
Serves: 4 for approx $7.50
Ingredients:
- 2 lb boneless, skinless chicken breast (or whatever chicken pieces you want to use-my breast were big, so I used 2)
- 1 package taco seasoning -1 oz size
- 1 cup water
- 4 flour tortillas
- 4 oz shredded cheese
- Toppings of your choice
- 1 avocado
- 1 16 oz refried black beans
- 1/8 tsp ground cumin
- 1 jalapeno
Directions:
Place chicken (thawed or frozen) in crock pot. I left the skin and bones on my chicken, but you can debone and take the skin off first if you prefer. Mix taco seasoning with water until dissolved. Cook on low 6-8 hours or high 4-6 hours, depending if frozen or thawed. Chicken is done when it falls apart easily with fork. (I skimmed the bones and skin out with a slotted spoon). On a cutting board, shred the chicken and return to the crock pot and stir.
Pile chicken on flour or corn tortillas or in taco shells and garnish with your choice of vegetables, cheese and salsa.

*For my price, I used flour tortillas, shredded lettuce, white onion, tomato, and shredded cheese and salsa.
For the refried black beans, heat according to directions, stirring in 1/8 tsp ground cumin and a small chopped jalapeno if you like.
FROZEN BANANAS
I saw this recipe in O magazine, (The Oprah Magazine-August 2012) and thought, “How good could this really be?”….It’s delicious and so easy and cheap!
Ingredients:
For 4 people, you’ll need 4 bananas. Easy!
Directions:
Peel bananas and slice them into two-inch pieces, then freeze for at least three hours. Using a food processor, puree the frozen bananas for five minutes, stopping occasionally to scrape down the sides f the bowl. The bananas will seem crumbly at first and then become fluffy and smooth. Serve the dessert plain-or for a fun take o a banana split, ad toppings like chopped walnuts and chocolate chips. I tried a sprinkle of cinnamon on one bowl and that was SO good!
