I am a white rice/white pasta/white bread loving woman. I like my starchy, bad for you foods on occasion and since I really do eat them in moderation, I don’t think it’s that bad for me. I also like vegetables a lot, which I eat more of than anything else, so when I saw this clever idea on preparing cauliflower that comes out like rice, well, I immediately had to try it. (It helped that I already had cauliflower on hand!)
I’m a huge fan of cauliflower which is low in calories and carbohydrates and high in vitamins and minerals. My very favorite way of preparing it is roasted with a bit of olive oil, salt and pepper. Last year we shared a recipe for making a “pizza” crust out of cauliflower, which was really good.

This “rice” cauliflower recipe comes from slate.com and cooks up in about 15 minutes with a minimum of ingredients. And it’s so good, you won’t even miss the real rice. You can season this in so many ways too. We tried it with just a bit of olive oil, Kosher salt, and black pepper. Next time I make it, I’m going to add some parmesan cheese and pop it under the broiler for a few seconds.
And this is so easy to make, anyone can do it…
Cut up your head of cauliflower into smaller pieces.
Put those pieces into a food processor and process until it looks like rice.
Heat up a pan on the stove, add about a tablespoon of olive oil, depending on how much you’re making, add your cauliflower “rice” and saute for about 12 to 15 minutes. Season with Kosher salt and pepper. You can also add a bit of garlic while you’re cooking this.
This is delicious! And much tastier than white rice.
Here’s the slate.com video, which is very short and to the point, on how to prepare cauliflower “rice.”
