I’ve mentioned many times that even though I’m a fairly good cook, I’m not that great of a baker. So when I saw this article in the Huffington Post about making cakes with only two ingredients, I immediately went to the grocery store and bought what I needed to try a couple of them out. Two ingredients? Yes, I thought, I could handle that.
Basically the recipe is composed of a box of super moist cake mix and a 12-ounce can/bottle of a carbonated beverage. Sounded very weird to me since the beverage is used as a substitute for the normal eggs, butter and oil boxed cake mixes call for. Now I’m certainly not saying these cakes are healthier since they do contain (most of them,) sugary drinks, but you can keep the calories down when using diet drinks and if they taste good enough without frosting, well, you’re saving some calories there too and some money.
The first cake I made was with a Devil’s Food flavored box cake and a 12-ounce Diet Coke. Nothing else.
In the bowl, it didn’t look like anything I’d want to eat!
Simply mix and wow, it looks like cake batter.
This was delicious without any icing and it tasted exactly like chocolate cake. I paid a dollar for the box mix and 30 cents for the Diet Coke so this only cost $1.30 to make…and it was really good!
With icing, it was even better! I just used a can of icing from the store.
The second cake I made used lemon-flavored box cake and a 12-ounce can of Sprite.
I used two smaller tins to make 2 cakes from 1 mix. This is a great way, especially during the holidays, to share baked goodies with friends and neighbors that won’t cost too much but still gives everyone something delicious to try.
My very favorite way to eat this fabulous lemon cake was hands-down, without anything topping it. It wasn’t overly sweet, had a hint of tartness and was super-moist. Each loaf cost 65 cents.
A really easy glaze to make consists of 1 cup of confection sugar to about 4-6 teaspoons of milk. I’d start out with 4 teaspoons of the milk and mix, adding more milk, until you reach the consistency you want. Some like it thicker, some thinner. You can also add a bit of citrus juice to make whatever flavor you want…lime, lemon, orange.
You can add a little touch of sprinkled confection sugar to any of these cakes…
Each of these were a hit in our house and I’m looking forward to trying out more flavors and pan shapes, including cupcakes. These could very well turn out to be my Christmas baked goodies I give out this year.

My absolute favorite mix is a spice cake and a small can of pumpkin, solid packed!
I always add a little water, about a 1/2 cup, but it is such a yummy brownie-like result!!
