I was surprised at just how easy and quick these chicken flautas were to make, not to mention delicious. You can use leftover chicken, store-bought rotisserie chicken, dark or white meat, whatever you have on hand. I cooked 2 chicken breasts for this since I like white meat and they were on sale. The entire meal, with the beans and deliciously cool jicama salad, came in at approximately $9.59 for a family of 4, with 4 flautas per person. Not a bad deal. CHICKEN FLAUTAS WITH JICAMA SALAD
Prep Time: 20 minutes
Cook Time: 15 minutes
Serves: 4 for approx. $9.59
INGREDIENTS:
- 1 cup vegetable oil for frying
- 2 cups cooked chicken, shredded
- 1 cup shredded Monterey Jack cheese
- 1 7 oz. can salsa verde
- 1/4 teaspoon ground cumin
- salt
- 16 6-inch soft corn tortillas
- 1 cup sour cream
- 1 cup peeled and chopped jicama
- 1 head romaine lettuce, shredded or chopped
- 1 tomato, chopped
- 2 tablespoons fresh lime juice
- zest from lime
- 1 can black beans
DIRECTIONS:
In a large, deep skillet, heat 1 inch oil over medium high heat. You want it to reach 350 degrees on a deep-fry thermometer.
In bowl, combine chicken, cheese, salsa, cumin and pinch of salt.
Wrap tortillas in a towel and microwave until warm, about 1 minute. Spoon about 1/4 cup filling onto 1 tortilla and roll up tightly. Don’t over-stuff them. Repeat with remaining filling and tortillas. Fry flautas seams side down, turning once, until golden, about 5 minutes. Drain on paper towels.
In bowl, whisk 1/3 cup sour cream with lime juice. Season with salt. Add jicama, romaine, and tomato.
To serve: Serve flautas with salad and black beans on side. Garnish flautas with remaining sour cream. If desired, sprinkle lime zest over sour cream and flautas.
For a gluten free version, make sure the salsa verde, sour cream and black beans are labeled GF.
FOR BLACK BEANS –
Heat according to directions. Add a pinch of cumin while heating if desired for extra flavor.
