This is such an easy but delicious recipe. It’s so easy, even if you can’t cook, you can totally make this! And it’s a perfect dish for the kids (and maybe a bit of help from an adult) to put together for a fabulous Mother’s Day breakfast in bed or brunch. This actually gets mixed up the night before so it can sit in the fridge overnight and then you toss it in the oven the next morning for an hour and it’s done. Eggs, bacon, cheese and bread make this a complete meal in itself. This came in at approximatey $7.44 and will easily feed 6. For a couple of dollars extra, you can add a fruit salad. You don’t need “fancy” bread for this recipe either. You can pick up the cheap store brand bread, which can usually be found for a buck or buy day old bread.
BACON, EGG & CHEESE STRATA –
Prep Time: 20 minutes
Cook Time: 1 hour
Serves: 6 for approx. $7.44
INGREDIENTS:
- 8 bread slices, cut in cubes
- 8 slices cooked bacon, crumbled
- 1 1/2 cups shredded cheddar
- 8 eggs
- 2 cups milk
- 3/4 teaspoon Dijon mustard
- salt and pepper
- *Salsa for garnish if desired
DIRECTIONS:
In a large bowl, toss cubed bread with bacon and cheese. Pour in 9×13 buttered baking dish. In another bowl, whisk eggs, milk, Dijon mustard and a pinch of salt and pepper until smooth. Pour egg mixture over cubed bread mix. Cover and refrigerate overnight.
To bake; Preheat oven to 350 degrees and cook for 1 hour, until golden brown and set in the middle. Let sit 5 minutes before serving. Garnish with salsa if desired.
