For those of you not familiar with the “Batali” name, Chef Mario Batali is a well-known chef and author. When his 50th birthday was approaching, his two sons wanted to get him something special so they decided to create a family cookbook for their dad. To create the book, they would call their dad, who was away on a working trip, and ask him how to cook their favorite recipes. The boys would cook it and their mom snapped pictures. A cousin helped them put the book together and Mario was thrilled with the gift, so much so that in May they published (on a larger scale), The Batali Brothers Cookbook
Roasted Tomato Soup With Toasted Cheese & Herb Sandwiches – $10 or Less Meal (For A Family of 4)
There’s something comforting about toasted cheese sandwiches and tomato soup, which we’re kicking up a notch using herbs and roasted tomatoes. This entire meal, including soup and sandwich came in at approximately $7.25 for a family of 4.
Chicken Flautas & Jicama Salad – $10 or Less Meal
I was surprised at just how easy and quick these chicken flautas were to make, not to mention delicious. You can use leftover chicken, store-bought rotisserie chicken, dark or white meat, whatever you have on hand.
Spiced Pork Chops With Pineapple-Cilantro Rice – $10 Or Less Meal
The mix of paprika, cumin and cinnamon is SO good on these tropical chops. There’s a smoky yet sweet flavor, which I think would taste great with chicken or even fish too. This meal cooks in less than 30 minutes, cost $8.52 for a family of four (the price includes a side of steamed carrots), and is super easy to make. Perfect for a hectic weeknight.
Tuscan Chicken And Vegetables – $10 or Less Meal For A Family of 4
This is a one-pot wonder! By buying a whole chicken and cutting it up yourself, you’ll save a ton of money.
Mango and Avocado Salad with Tuna Cakes
Mangoes are on sale right now for $1.00 each and because I’m still in a tropical state of mind, having just got back from Hawaii, I’m taking advantage of this sale; regardless of the snow and below zero (with the wind chill factor) temperature outside! We ate a lot of crab cakes on the island […]
Fish Chowder
Here’s a hearty chowder that tastes great no matter what the weather’s like outside. Because of what’s on sale right now I use canned corn instead of fresh and tilapia as my fish. You can use whatever white fish you like. If you want to spend a bit more, you could add some shrimp to […]
Fish Tacos With Lime Aioli, Black Beans & Rice, And A Side Of Mango
My husband and I just got back from Hawaii and while we were there, I think I ate fish tacos at least 5 times at different restaurants. And while they were good, my husband said my fish tacos were better in most cases (and they are a heck of a lot cheaper!) I made this […]
Chipotle Chili Beef Tacos With Rice & Corn – $10 or Less Meal
I can get in a rut sometimes when trying to figure out what I want to cook for dinner. Ground beef tacos are one of my “go-to” quick meals but I make them the same way all the time. Instead of using packaged taco seasoning, I decided to try something different and used chipotle chilies in adobo sauce and they were delicious and different.
French Onion Soup – $10 or Less Meal (Perfect For Cold Winter Nights & Only 410 Calories!)
This particular recipe cooks in less than 30 minutes but has the rich flavor of one that takes a lot longer.
Cooking On FOX 21’s Foxy Moms With Craig Coffey…Watch It Live
I love when Craig Coffey (from FOX 21 News Foxy Moms) comes to the house to “help” me cook. We whipped up a couple of healthy but delicious meals for less than $10 for a family of 4, and created a couple of recipes using oranges, which are super cheap right now. Cooking with Craig […]

This is a super fast meal to put together, loaded with flavor and good for you protein and fiber.
Rigatoni With Mushroom Sauce & Romaine, Red Onion & Orange Salad – $10 or Less Meal
Here’s a meatless meal that’s hearty, easy, and delicious. I did try the mushroom sauce using just fresh button mushrooms and then tried it with dried mushrooms mixed with the fresh, and it really did make a difference.
Making Shrimp Salad on KKTV at The Cliff House…With Executive Chef Boudouin
This is not only a fresh and delicious salad, it’s not expensive, easy to make and can be made ahead of time…which makes this a favorite of mine. I am always thrilled to cook alongside The Cliff House Executive Chef, Justin Boudouin, watching how he plates, seasons, and turns out wonderful dish after wonderful dish. […]
Linguine With Clams – $10 or Less Meal for 4
Until I made this, I assumed it would be difficult or that I’d have to use fresh clams, which can be difficult to find in some areas and expensive. This recipe uses canned clams and is so super easy, and delicious.
Leftover Shredded/Pulled Beef, Pork or Chicken Ideas…Wraps, Nachos, Tacos, Potatoes, Etc.
Have fun with these ideas, change out cheese flavors or use up any fresh vegetables you have in the fridge as additions. These are great ideas for football watching get-togethers, casual dinners, party appetizers, etc.
Homemade Calzones & Carrot Ribbon Salad ($10 or Less Meal)
One of our most popular recipes has been our homemade pizza and sauce so I thought, why not use the dough and sauce and come up with something just as tasty (and cheap) but different. So today’s recipe is homemade calzones, which I stuffed with hamburger, peppers, onion, mushroom and olives but of course, just as with the pizza, you can add any fillers your family likes or whatever leftovers you have in the fridge. And because this is a kid-friendly, but good enough for adults dish, I paired it with a carrot ribbon salad I just saw in one of my favorite magazines.
