Pesto is typically made using fresh basil and pine nuts, along with garlic, cheese and oil but you can use so many other greens and nuts. I like making this carrot greens pesto because I consider the green leaves a “free” food when they are still attached to the carrots which saves me money and it’s delicious and different.
CARROT GREENS PESTO
INGREDIENTS –
2 cups carrot greens, rinsed, rinsed, and rinsed again (they can be dirty)
1/2 cup walnuts
1/2 cup grated Parmesan cheese
2 tablespoons orang juice
1 clove garlic (I use about 3 which makes it super garlicy)
1/2 teaspoon Kosher salt
1/4 teaspoon crushed red pepper flakes (optional)
1/4 cup olive oil
DIRECTIONS:
Add all the ingredients, except for the olive oil to a food processor and pulse a few times until mostly chopped up. While food processor is running, slowly add olive oil.
