AIR FRYER IRISH EGG ROLLS
Makes 8 egg rolls for approx. 75 Cents each
INGREDIENTS –
4 oz. chopped corned beef
1 cup steamed cabbage
1 cup diced cooked potatoes
1 cup shredded carrots
1/2 cup thinly sliced onion
salt & pepper to taste
8 egg rolls
** Or just use a mixture of your leftover Corned Beef & Cabbage from St. Patrick’s Day
DIRECTIONS –
Mix all the ingredients together. Taste and season with salt and pepper as needed.
Place a single egg roll wrapper on a dry surface with one point facing you, like a diamond. Place 1/4 cup filling just below the center of wrapper. Moisten finger with water and run around the edges of the wrapper. Fold bottom corner over filling, fold side covers toward center over filling and roll egg roll up tightly, pressing at tip to seal.
In batches, arrange egg rolls in a single layer of air fryer, spritz with cooking spray. Cook at 350 degrees and cook 6 to 7 minutes until golden brown. Flip egg rolls, spritz with additional cooking spray and cook till golden brown, 4 to 5 minutes longer.
