RASPBERRY BELLINI
Makes 6 drinks for approximately $16.50 ($2.75 per drink)
INGREDIENTS –
10-12 oz frozen raspberries, defrosted
2 Tbsp sugar
750 ml sparkling wine
Optional – strawberry or raspberries as garnish
DIRECTIONS –
In a blender, pulse the raspberries and sugar until the fruit is broken down. Fit a fine mesh strainer over a mixing bowl and strain strawberry mix. Use a spatula or the back of a spoon to help push seed mixture through the strainer. Discard seeds and refrigerate raspberry puree until ready to use.
Add 1 Tbsp of raspberry puree to champagne flute. Top with sparkling wine. Garnish with strawberries or raspberries if desired.
