Here’s a sweet treat for St. Paddy’s Day that doesn’t take long to make. It’s called Irish Potato Candy but there’s no potatoes in it. And of course it doesn’t have to be Saint Patrick’s Day to enjoy them!
IRISH POTATO CANDY –
Prep Time: 20 minutes
Chill: 30 minutes
Makes: 5 dozen for approx. $6.00
Ingredients:
- 1/4 cup butter
- 4 ounces cream cheese (1/2 of a 8 ounce block)
- 1 teaspoon vanilla
- 4 cups confection sugar
- 2 1/2 cups flaked coconut
- 1 tablespoon cinnamon
Directions:
In medium bowl, beat butter and cream cheese until smooth. Add vanilla and confection sugar, beat until smooth. Add coconut and mix (you might want to use your hands.) Roll into balls (or potato shapes,) and roll in cinnamon. Place on cookie sheet and chill about 30 minutes to set. If desired, roll in cinnamon again for a more intense flavor.
