I like to mix up the homemade goodies I give every year during the holidays. Sometimes I’ll do chocolates and cookies, last year I did rubs and spices for meats. This year I decided to make homemade salsa that requires no boiling water canning and will keep in the fridge for up to one month. This is so good, I was eating it by the spoonful. This is fairly quick to put together, doesn’t require any hard to find ingredients and best of all, it’s easy on the budget. A delicious salsa to eat at home, take to parties, or package up for gifts.
The price will vary depending on what’s on sale and where you shop. You can use all organic ingredients if you want, which will of course raise the price.
My costs…
I used Roma tomatoes which were $1.49 a pound, the bell peppers were 99 cents each, cilantro was 50 cents for a bunch, I bought my onions in a 3 pound bag for $1.99 and limes were 25 cents each.
If you do put these in canning jars, make sure you wash them first and label them, letting the person know it needs to be kept in the refrigerator (up to 1 month.) I used various sized jars with some holding 1 cup, 2 cups and 3 cups.
TOMATO & JALAPENO SALSA –
Prep: 20 minutes
Costs: $3.00 for 5 cups
Ingredients:
- 3 cups chopped tomatoes
- 1/2 cup chopped green bell pepper
- 1 cup diced/chopped onion
- 1/4 cup chopped cilantro
- 2 tablespoons fresh lime juice
- 4 teaspoons chopped fresh jalapeno
- 1/2 teaspoon ground cumin
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon black pepper
Directions:
Mix all the ingredients together….it’s that easy!
