I think anything green can be served on St. Patrick’s Day, including this minty chocolate chip popcorn. Super easy and just fun!
MINT CHOCOLATE CHIP POPCORN
Ingredients:
4 cups popped popcorn
3 tablespoons honey
2 tablespoons butter
1/8 teaspoon vanilla
1/2 teaspoon mint extract
few drops of green food color
1 to 2 tablespoons chocolate chips
DIRECTIONS –
Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment paper. Place popped popcorn in large bowl.
In a small pan, over low heat, combine honey and butter. Stir until melted and smooth.
Remove from heat and stir in vanilla, mint extract, and food coloring.
Drizzle mixture over popcorn and gently stir until evenly coated.
Spread popcorn into a single layer on prepared baking sheet and bake 5 minutes.
Remove from oven and stir. Spread mixture back into a single layer and return to oven. Bake in 3 minute increments, stirring each time, until popcorn is dry. Keep an eye on it so it doesn’t burn.
Remove from oven, let cool slightly and sprinkle chips over popcorn.
