I have been using this Creme Brulee recipe for over 20 years. It is so delicious that I quite honestly have never tried another recipe because this comes out perfect each and every time. Creme Brulee is actually easier to make than you think. It requires no special skills and it’s also very affordable. Your biggest expense will be the whipping cream, which I purchased at Walmart.
Without garnish, this was approximately $4.50. I picked up raspberries and added about a dollars worth, which made this dessert cost about 70 cents per serving. You can also make this ahead and simply finish the brown sugar topping before serving.
I like using the broiler to harden the sugar glaze because I can do all of them at the same time. But if you prefer using a kitchen torch, do so.
CREME BRULEE
Prep Time: 5 minutes Cook: 45 minutes Serves: 8 for approximately $4.50 – $6.00 (depending on garnish)
INGREDIENTS:
3/4 cup sugar
3 cups whipping cream
7 egg yolks, lightly beaten (You can use the whites for scrambled eggs or in an omelet.)
2 teaspoons vanilla extract
1/2 cup firmly packed brown sugar
Garnish options: raspberries, strawberries, blueberries
DIRECTIONS:
Combine 3/4 cup sugar and whipping cream in heavy saucepan. Cook over medium heat, stirring constantly until sugar melts and mixture comes to a simmer. DO NOT BOIL. Remove from heat.
In a small bowl, combine egg yolks and vanilla. Gradually stir one-fourth of hot whipping cream mixture into yolk mixture; add to remaining hot whipping cream mixture, stirring constantly.
Carefully ladle custard mixture evenly into eight 4-ounce ramekins. Place ramekins in a large roasting pan or two 9-inch pans. Add hot water to pan to a depth of about 1 inch. Bake, uncovered, at 350 degrees for 35 minutes. Remove ramekins from water and cool slightly on wire rack. Cover and chill until ready to serve.
Place ramekins on baking sheet. Sprinkle brown sugar evenly over custards. Broil about 5 inches from heat 3 minutes or until sugar melts. Cool on wire racks to allow sugar to harden.
Garnish, if desired, with berry of choice.
