This study says we discard 40% of food every year, costing an average American family of 4, $2,275 a year! That would be enough money to take a nice little family vacation or help pad a savings account.
I admit, that I am so guilty of this…and I really have tried to utilize our leftovers more than ever this year, but I do still end up throwing food away every week (and want to kick myself every time I do!) I will say I have been more conscientious about saving my fresh vegetable discards for homemade soups and stocks, which I had never done before.
