Our most popular recipe for 2014 was for a Nacho Cheese Ball that I originally had made for a Halloween party, which is why I stuck a green bell pepper stem on it, to make it look like a pumpkin. But I also served it during Christmas dinner and for other holiday parties. Each and every time I made it, everyone wanted the recipe. It’s that good!
The cheese ball is so simple to make and uses everyday ingredients that are easy to find and not expensive. The last time I made this I didn’t have a fresh jalapeno so I just added extra salsa which changed up the consistency just a bit but was still good. I also experimented with a Bacon Cheese Ball for a family get-together that was equally delicious and easy to make, but which I totally forgot to take a picture of before it was devoured.
These would make perfect appetizers to help ring in the New Year.
BACON CHEESE BALL –
Ingredients:
8 ounces cream cheese, softened
8 ounces grated smoked Gouda (or other flavor)
2 tablespoons sliced green onion or chives
4 slices chopped, crisply cooked bacon
Directions:
Mix softened cream cheese with Gouda or other cheese. (I use the food processor for this.) Stir in onion/chives. Form into a ball and roll in chopped, cooked bacon. Wrap in plastic and refrigerate for at least 2 hours.
