I’ve never even bought rhubarb, thinking for some reason it would be too hard to cook with, even though my husband loves rhubarb. Well, now I have no excuse! Rhubarb (similar in texture to celery) is full of vitamins, anti-oxidants and fiber. I will say, it doesn’t taste too good raw. I sampled it as I was trying one of these recipes and it’s very bitter. I didn’t realize how easy rhubarb is to grow and plan on planting some next season. If you haven’t tried cooking it or don’t think you like it, I think you’ll be pleasantly surprised making one of these 24 rhubarb recipes.
