Tuesday my husband and I attended a book signing event at Nourish Organic Juice for our friend JL Fields. JL co-authored (with Virginia Messina, MPH, RD) the book “Vegan for Her; The Woman’s Guide to Being Healthy and Fit on a Plant-Based Diet.”
I am not vegan but I’ve been reading the book and there’s a ton of information, recipes, and health tips that I can and will use. I admit I like a good steak every once in a while and I love fish and chicken. (Along with eggs, butter, and bacon!) But we have been trying to eat healthier at home, eating red meat less and experimenting with different grains and vegetables. Some easy vegan meals we’re going to try are oatmeal with chopped apples and walnuts, spinach bow tie pasta salad, and pizza topped with grilled vegetables (just a few of the recipes in the book.) They sound delicious and contain ingredients I normally buy anyway. So if you’ve already adopted a vegan lifestyle, you’ll love this book. If you’ve been considering going vegan, you’ll find a lot of information on how to start and all the health benefits, and if you’re like me, who still likes my meat, you can still eat your meat but add some healthier sides or go meatless one or two days a week.
I first “met” JL via email in January, and she impressed me very quickly with her passion and her knowledge. I invited her to be on a cooking video with me and she accepted!
Here’s one of the suprisingly filling and delicious recipes in the book that JL and I cooked up: Mediterranean Beans with Greens and Grains.

JL’s one of the nicest women I’ve ever met and I’m so happy and excited for her! I’ve never known someone who actually wrote a PUBLISHED book! She’s an inspiration to me, the book is interesting and full of great information. Hope you check it out!
