Our next two recipes for Saturday, August 11th and the 18th are going to be crab and tilapia roulade (crab stuffed tilapia) with long grain and wild rice, with yellow squash and carrots (on the 11th) and on the 18th, chicken tacos with refried black beans with jalapeno and a frozen banana dessert….Here’s a couple of important sales that are current so that you can create these meals for $10 or less.
Tilapia and Crab Roulade
I got my tilapia on sale at Albertsons where it’s on sale buy one get two free bags. Some of the bags have 4 fillets and some I found have 5 fillets. If you get three bags, even at 4 to a bag, it averages out to $2.66 for 4…..I also bought a can of crab at Albertsons for $4.29 (the most expensive ingredient) but I will only use half of it….you can actually make the crab stuffing using the entire can, keep out half for the tilapia, and then make crab cakes for a future meal. The bread crumbs I use in this recipe (I could have made my own but was lazy) is Albertsons brand and on sale for $1.00 for the can (found in the spice/baking aisle. And instead of creating my own rice, I use Rica A Roni (I don’t use packaged foods that often but when it’s on sale for this price, why not?) which is on sale for 88 cents a box at Albertsons…I use the long grain and wild rice flavor. I bought one yellow squash at Safeway for 96 cents and carrots are on sale (at Albertsons) for 89 cents a pound and I use 4 carrots, making it 40 cents fo what I use.
Chicken Tacos
For the chicken tacos, I did use my chicken I got last week on sale at Albertsons for 88 cents a pound and I used two chicken breast which came to $1.76 (2 pounds). Albertsons does have their whole chickens on sale for 77 cents a pound and you can cut up the whole chicken or cook the whole thing and save the extra chicken for a future recipe or just have leftovers. I could have saved some money by making my own taco seasoning but it was on sale for 99 cents a package at Safeway so I just used that….Becaise refried beans were on sale at Albertsons for 50 cents a can, I again, used that. If you rinse them off before cooking, you’ll get rid of a lot of the sodium. I prefer black beans so that’s what I got but you could buy the regular (pinto bean) refried beans that are also on sale for 50 cents. I’m loving the Just 4 U coupons you can download on your Safeway Club Card and by doing that I was able to buy Safeway Chunky Salsa for $1.49 (16 oz), iceberg lettuce for 99 cents a head, and Mission tortillas for $1.19 (for 12)…My avocado was $1.00 from King Soopers and the cheese I use was bought at Albertsons, on sale for $1.67 for Albertsons brand chunk cheese 8 oz (which I shredded myself and saved money).
All of these sale prices are current through Tuesday, August 14th. I didn’t use coupons except for what I was able to download on my Safeway club card.
