KVOR’s Table Talk
I had the pleasure of meeting Teresa Farney, Colorado Springs Gazette food editor and host of “Table Talk on KVOR” radio show this past week when I was a guest on her show. She and DJ Mark Goldberg, who was sitting in for DJ Aaron Seller. were so warm and welcoming and gave me the opportunity to talk about our website. Radio Hosts Always Should Get A “Hostess” Gift!
Since I was a guest, I of course took a “hostess” gift to her.
This basket of goodies is inexpensive, tasty, and perfect for any occasion you might attend as a guest. Again, you can take the ideas and then buy more expensive items or alter a few things and make it less expensive. Custom-make it to suit your budget. The bread I included in Teresa’s basket is SO DELICIOUS and cheap to make!
The BEST 4 Ingredient, No Knead Homemade Bread – Costs about 35 cents!
I got this recipe from my good friend Rachel (she made a few changes from the original recipe “New York Times No Knead Bread”.) The recipe was adapted from Jim Lahey, Sullivan Street Bakery. This is CHEAP, DELICIOUS and SO SIMPLE! It literally takes minutes to prep…don’t let the rising time put you off…once you try it, you’ll be making it all the time.
Time: 1 1/2 hours (prep and cook) plus 14-20 hours rising
Yields: one 1 1/2 lb loaf for about 35 cents
Ingredients:
- 1 1/2 cups lukewarm water
- 1/4 teaspoon active dry yeast
- 1 teaspoon salt
- 3 cups all-purpose flour, bread flour OR (what I used) high-altitude flour
- wheat bran (I used) or corn meal or flour as needed
Directions:
In a large bowl combine flour and salt. Add yeast to warm water and let dissolve, then whisk. Add the yeast mixture to the bowl of flour and salt and combine gently with hand. Cover bowl and let dough rest at least 12 hours, preferably about 18 hours, at room temperature.
Generously coat a cotton towel (not terry cloth) with wheat bran, cornmeal or flour. Lightly flour a work surface and drop bread out. Pat it down a bit, fold it and place folded side down on wheat bran (or whatever you’re using). Sprinkle top with more wheat bran and fold towel around it to where it’s loosely covered. Let sit 1-2 hours.
About thirty minutes before dough is ready, heat oven to 475 degrees. Put a 6-8 quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Slide your hand under towel and turn dough over into pot, seam side up. It may look like a mess, but that’s okay. Cover with lid and bake 30 minutes then remove lid and bake 15 minutes uncovered. (If you want your bread a little less crusty, remove after 30 minutes baking.) Cool on wire rack and enjoy!
*When storing the bread you want to just loosely wrap it, don’t cover it tightly.

“A Taste of TLC”
Monday, May 7th Tri-Lakes Cares is hosting their Second Annual “A Taste of TLC”. Enjoy the creations by local chefs given specific food items from the TLC pantry-similar to the tv show “Chopped!” Local restaurants will showcase what they can make from food that clients often receive in their commodities basket or from the pantry.
$10 per person, plus one donated item from the following list, children 10 and under free with paid adult.
Acceptable Donated Items:
- Powdered laundry detergent (they divide it up and put it in plastic bags for their clients)
- Toilet paper
- Shampoo/conditioner
- Toothpaste
- Feminine hygiene products
- Deodorant
- Child diapers (size 3-6).
Haley said that when people have to choose between food to feed the family and personal hygiene products, food is the obvious choice and hygiene products fall by the wayside. You know, the major bread-winner in the house getting laid off, a major illness, an unexpected emergency….you just never know what can happen and they are there for you.
Kathleen Boleyn of Enchanted Strings
The other guest on Teresa’s radio show was Kathleen Boleyn who is the owner of Enchanted Strings. Talk about someone who is multi-talented! Kathleen has been performing with the harp for over 25 years as a soloist and in ensemble. She has performed with the Pikes Peak Philharmonic and at the Kennedy Center. She plays for weddings and funerals and teaches harp to youth and adults.
But she also knows how to make fabulous teas AND hand paints porcelain so this clever woman has combined all these talents and offers afternoon teas from her home! She serves teas along with savories, scones and desserts (on her own hand-painted dishes) and then serenades you with the soothing sounds of the classical harp as you enjoy your tea.
This would make a great event for groups or organizations, mom/daughter time, a new place to relax and catch up with friends, etc. (She also has a great selection of hats you can wear while you slip back in time and her house is decorated exquisitely.) I’m so impressed that you learned so recently about how to put your website together and work it. You’ve inspired me to update mine, and add some features like you have.
When I first got on your website I made the pasta carbonara the next day and loved it. Can’t wait for an “excuse” to make it again. I added peas this time, and will try artichoke hearts next time.
